  • 8 pieces Thai chilis (or to taste) These add heat. Adjust based on your heat tolerance; substitute with serrano chilis if unavailable.
  • 1.5 tablespoons fish sauce Opt for a premium brand like Red Boat for a well-rounded umami flavor.
  • 1.5 tablespoons granulated sugar Balances the dressing; coconut sugar can be used for a more authentic twist.
  • 3.5 tablespoons fresh lime juice Freshly squeezed lime juice makes all the difference.

Preparation
  1. In a mortar and pestle (or a small food processor), add the peeled garlic.
  2. Add the Thai chilis and pound until finely crushed, releasing their oils.
  3. Pour in the fish sauce, sugar, and lime juice.
  4. Stir and mix all the ingredients together until the sugar fully dissolves into the mixture.
  5. Taste and adjust lime or sugar as per your preference.

Notes

Store in an airtight container in the fridge for up to one week. The flavors will deepen over time. It tastes best at room temperature, so allow it to sit out for a bit before serving to enhance flavors.
