  • 3 tablespoons lime juice Freshly squeezed for tanginess.
  • 1.5 tablespoons fish sauce Use high-quality fish sauce for better flavor.
  • 1.5 tablespoons sugar Balances acidity of lime juice.
Serving Ingredients
  • 2 cups shredded cabbage Use green or Napa cabbage for crunch.

Method
 

Preparation of Squid
  1. Clean the squid thoroughly under cold water. Remove innards and beak.
  2. Slice squid into rings or leave whole for presentation.
  3. Steam the squid by filling a pot with water and placing a steaming basket inside. Bring to a boil, then add squid and steam for 5-6 minutes until opaque.
Making the Sauce
  1. In a bowl, combine minced garlic, chopped chilis, lime juice, fish sauce, and sugar. Stir until sugar dissolves.
  2. Taste the sauce and adjust ingredients to preference.
Assembling the Dish
  1. Layer shredded cabbage on a large serving plate.
  2. Arrange steamed squid on top of the cabbage.
  3. Drizzle the prepared sauce over the squid.
  4. Garnish with mint leaves.
  5. Serve immediately while fresh.

Notes

Ensure not to overcook the squid to prevent a rubbery texture. For added depth, a splash of soy sauce can enhance flavor.
