  • 1.5 tablespoons Thai red curry paste look for a brand like Mae Ploy for authentic flavors
  • 10 pieces shrimp peeled and deveined; fresh or frozen
  • 5.3 oz ground pork can substitute with chicken or tofu
  • 5.3 oz stink beans peeled and cut in half
  • 1 tablespoon fish sauce replace with soy sauce for a vegetarian option
  • 1 teaspoon sugar balances the flavors beautifully
  • 5 pieces red Thai chilis sliced diagonally; adjust according to heat level
  • 6-7 leaves kaffir lime leaves deveined and hand-torn

Method
 

Cooking Instructions
  1. Set a pan over medium heat and add cooking oil. Let it heat up for about 1 minute until shimmering.
  2. Once the oil is sizzling, add the Thai red curry paste and stir fry until fragrant, about 2 minutes.
  3. Add the ground pork and break it into small pieces. Cook for about 5 minutes until browned.
  4. Add the shrimp and stir until they are almost cooked through, about 2-3 minutes.
  5. Toss in the stink beans, followed by the fish sauce and sugar. Cook for an additional 1-2 minutes.
  6. Add the sliced chilis and kaffir lime leaves, stir frying for another minute before removing from heat.
  7. Serve with jasmine rice immediately.

Notes

Ensure the oil is hot before adding curry paste for best aroma. If stink beans aren’t available, you can substitute with green beans.
