Preparation
- Pound the cilantro roots in a mortar with a pestle until paste-like in consistency.
- Add the white peppercorns and continue to pound until well integrated.
- Incorporate the peeled garlic and pound until mixed well and fine. Set aside.
- In a mixing bowl, combine the ground pork with the soy sauce, sugar, and cilantro mixture.
- Let the mixture marinate for at least 10 minutes before cooking.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. This marinade can be made in advance and stored overnight in the fridge.
