  • 1/2 teaspoon white peppercorns Use whole peppercorns for maximum flavor.
  • 1 head garlic (peeled) Fresh garlic is essential for the marinade.
Main Ingredients
  • 10.6 ounces ground pork Aim for about 20% fat content for juiciness.
  • 1/2 tablespoon soy sauce Can use low-sodium soy sauce.
  • 1 pinch sugar Adjust to taste to balance flavors.

Method
 

Preparation
  1. Pound the cilantro roots in a mortar with a pestle until paste-like in consistency.
  2. Add the white peppercorns and continue to pound until well integrated.
  3. Incorporate the peeled garlic and pound until mixed well and fine. Set aside.
  4. In a mixing bowl, combine the ground pork with the soy sauce, sugar, and cilantro mixture.
  5. Let the mixture marinate for at least 10 minutes before cooking.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. This marinade can be made in advance and stored overnight in the fridge.
